Yellow squash, onion, red and yellow Bell pepper strips, and possibly one or two more veggies. If you are industrious you can grill your own blackened salmon. I bought salmon with seasoning from the grocery and baked it in the oven.
At least, that's what I tell myself. In truth, I like taking photos, and that includes, on occasion, some of the dishes I cook. And I like blogging (my main blog is here). My main blog is mostly text with few pictures, and this blog is mostly pictures with little text. But still, this blog might be useful to some people, and it helps keep me off the streets and out of trouble. :-)

Salad #1
Throw some assorted lettuce leaves into a bowl (please be more imaginative than using the ubiquitous iceberg lettuce).
Add broccoli, cauliflower, baby carrots, and chicken strips. You can buy pre-cooked chicken strips at most grocers — they come in a bag. Top with your favorite dressing.

Pizza
Though enjoyed by both married and single people, ‘za is definitely the comfort food of singles. This pie is from the Walmart deli, with extra pepper and onion added.
