You need: Italian sub roll. Genoa salami and boiled ham. Provolone cheese. Chopped olives. Thinly sliced onion. Chopped banana peppers. Sub dressing (or extra-virgin olive oil and red-wine or balsamic vinegar). Kosher salt and freshly ground black pepper. (You don’t have a pepper grinder? Get one. You can buy little grinders loaded with peppercorns almost anywhere.)

Burger Patty with Veggie Tortilla.
Ground beef patty with sautéed onions plus half of a flour tortilla with some kind of greens, sautéed mushrooms, and garlic. At least, I think it’s garlic. I probably should have taken notes.
When I stir-fry with peanut oil, toasted sesame seed oil, oyster sauce, soy sauce, and red pepper flakes, there is enough liquid remaining in the wok to sauté baby spinach leaves and they are very tasty!

Pizza On a Flour Tortilla
The cupboard is getting bare but you crave a pizza. This is a little “pizza” made on an 8-inch flour tortilla. If you have pizza sauce you can use it, or you can use mozzarella cheese — or provolone, or cheddar, or Parmesan. You can’t afford to be choosy.
This little pizza is topped with pepperoni, green pepper, onion, and mushrooms. It tasted pretty good. Of course, you could buy some small pizzas and put them in your freezer. They’re almost as good.
Oh yeah — you have to bake it for a little while. Not long.
Here’s a similar pizza on a flour tortilla. You can almost taste it.
Scrambled Egg with Sausage Crumbles
Pretty simple: scramble eggs and mix in sausage crumbles (available at your grocer — comes in a bag). Sprinkle a little salt and black or cayenne pepper on top. I hear some of you saying, “Get it away from me!” That’s okay. I happen to like it.

Veggie Stir Fry with Blackened Salmon
Yellow squash, onion, red and yellow Bell pepper strips, and possibly one or two more veggies. If you are industrious you can grill your own blackened salmon. I bought salmon with seasoning from the grocery and baked it in the oven.
